These Thyme and Cheddar Cheese Cookies taste absolutely delicious and are completely moreish. They are fantastic alongside a cheese and charcuterie board. Cheddar cheese is a delicious addition to these cookies, but it can be quite salty, so reduce the added salt in the recipe if you are not into salty food.

To make the cookie dough, start by shredding cheddar cheese and combining it with butter, flour and seasoning with thyme, salt and pepper. Bring the dough together and roll into a log shape. Chill in the refrigerator until ready to bake. When baking, allow 10-12 minutes for a softer cookie texture. If you like your cookies to be crisp, bake for 15-20 minutes instead. Enjoy!

Use a grater to shred 6 ounces of cheddar cheese.

Use a handheld mixer to combine the shredded cheese with 4 ounces of softened butter, black pepper, salt and thyme leaves in a bowl. Mix at medium speed for a few minutes until the butter is creamy and the cheese combines with the butter.

Add 1 ¼ cups of flour and mix on low speed until the flour forms wet clumps.

Bring dough together

Bring the dough together into a ball by pressing together, but do not knead much.

Form a log

Shape the dough into an evenly shaped, 6-7 inch long dough log. Wrap it in plastic wrap and knot the ends to ensure it is wrapped tightly. Chill the dough in the refrigerator for 30 min to 1 hour.

Cut into cookies

Unwrap the log and slice into ¼ inch cookies using a sharp knife.

Place the cookie discs on a parchment paper-lined baking tray 1 inch apart and chill in the refrigerator for at least 30 minutes.
