For this delicious one-pot soup recipe, I’m using onions and garlic to begin the flavoring process. Heat the olive oil in a large pot and add the onions, garlic, and a large pinch of salt. Cook until tender. Add in the tomatoes, roasted peppers, and vegetable stock. Bring to a simmer and cook for 15 minutes. Transfer the soup to a blender. Purée the ingredients until creamy and smooth.
