This easy and delicious Tuna Nicoise Salad is my go-to salad for summer. Loaded with baby potatoes, green beans, fresh tomatoes, fresh greens, hard-boiled eggs, canned tuna, and black olives and dressed with the zippy olive oil-based vinaigrette, this summery salad is nothing short of amazing. It is healthy, simple to toss together, and so delicious.
First, make the dressing. It’s pretty easy. Along with lemon juice and olive oil, there is a little Dijon mustard, garlic, salt and black pepper. Next, boil the potatoes and eggs, and blanch the green beans. Now assemble the salad. Dress the lettuce lightly and arrange it on a large platter. The choice of lettuce is up to you. Most typically, you’ll find romaine or Bibb lettuce. Here, I opt for a frisée and oak leaf lettuce combo. Using frisée instead of soft-leaf lettuce gives a dish full of comforting textures a fresh crunch. Arrange the green beans, potatoes, tomatoes, eggs, tuna flakes, and olives around the salad greens. Finish the salad by drizzling the remaining dressing over the top and serve.
To make the Tuna Nicoise Salad, you will need the following ingredients:
To a mason jar, add 1 minced garlic clove, juice of ½ a lemon, 4 tablespoons extra virgin olive oil, 1 teaspoon Dijon mustard, salt and black pepper to taste. Screw the lid on the jar and shake well to mix the ingredients thoroughly.
Place the potatoes in a pot of cold salted water. Bring to a boil, reduce the heat to a simmer, and cook until tender. Drain and set aside to cool.
Boil 3 eggs to your liking. Once cooked, remove the eggs from the pot and place them in a bowl of cold water to cool.
Peel the eggs and cut them in half.
Blanch the green beans in boiling salted water for approximately 3 minutes or until al dente.
Remove the beans from the pot and drop them into the bowl of ice water. Drain and pat dry.
Cut 2 tomatoes into quarters.
Dress the lettuce with 1 tablespoon of the dressing and arrange it on a large platter. Arrange the green beans, potatoes, tomatoes, eggs, tuna flakes, and olives around the salad greens. Drizzle the remaining dressing over the salad.
Season with another grind or two of fresh black pepper and serve.
