4 tbsp Butter
3 cloves Garlic minced
2 cups Cherry tomatoes halved
1 tsp Dried oregano
Kosher Salt
Black pepper freshly ground
1 pinch Red pepper flakes
4 cups Baby spinach
1 cup Chicken broth low-sodium
1 cup Heavy cream
½ cup Parmesan cheese freshly grated
¼ cup Herbs such as basil and parsley, freshly chopped, plus more for garnish
2 (17.5-oz) packages Gnocchi
1 cup Mozzarella shredded
8 wedges Lemon for serving

This warm Tuscan Butter Gnocchi will quickly have you looking like the next Masterchef in the city! A simple garlic butter sauce with heavy cream, chicken broth and Parmesan cheese. I add cherry tomatoes and baby spinach to add extra flavor and filling to the dish. A fun option to serve on pasta night that requires minimal effort and skill.

Steps to make Tuscan Butter Gnocchi

Preheat oven

Preheat the oven to 350 °F. Lightly grease a 9x12-inch baking pan.

Cook garlic

In a large skillet over medium heat, melt 4 tablespoons of butter and add 3 cloves of minced garlic. Cook for about 1 minute until aromatic.

Add tomatoes and seasoning

Add 2 cups of cherry tomato halves, 1 teaspoon dried oregano, a pinch of kosher salt, ground black pepper and red pepper flakes. Cook until tomatoes begin to burst and juices flow.

Add spinach

Add 4 cups of baby spinach and cook for a little while longer until it begins to wilt.

Add broth, cream, cheese and herbs

Add 1 cup of chicken broth, 1 cup of heavy cream, ½ cup of grated Parmesan cheese and ¼ cup of chopped mixed herbs. Lower heat to a simmer and cook for about 3 minutes until sauce is thickened and reduced.

Add gnocchi

Add 2 packages of gnocchi and toss to coat in sauce.

Add mozzarella

Transfer to a 9x12-inch baking pan. Top with sprinkles from 1 cup of shredded mozzarella cheese.

Bake

Bake in preheated oven for about 30 minutes until gnocchi is cooked and the cheese is melted and golden on top.

Serve

Garnish with any leftover herbs and a few squeezes of lemon to serve!
