Vegan Green Split Pea Hummus is a delicious twist on traditional hummus. This vegan hummus has an earthy flavor and beautiful color. It is flavored with garlic, cumin, and black pepper. I like to garnish my hummus with a drizzle of extra-virgin olive oil and a sprinkle of red pepper flakes.
You can make this hummus straight after cooking the split peas, and you will receive warm hummus that is quite nice and more comforting, in my opinion. But if you wish, you can leave it to cool completely before serving. Either way, load up a plate with pita chips and your favorite veggies, and be ready to dig in! It’s very moreish!
To make the Vegan Green Split Pea Hummus, you will need the following ingredients:
In a saucepan, combine ⅔ cup green split peas and 2 cups water. Cover and bring to a gentle boil. Reduce heat and cook until the peas are soft and tender for about 20-30 minutes. Drain and save any cooking liquid.
In a food processor, pulse 2 cloves garlic a few times.
Add in the cooked split peas, 3 tablespoons tahini, 3 tablespoons lemon juice, 1 teaspoon cumin, and ½ teaspoon garlic powder and process until smooth. Add up to 1 teaspoon salt or to taste and a dash of black pepper.
If the hummus is too thick, add in a bit of cooking liquid. If it is too liquidy, add more tahini.
Serve with a drizzle of olive oil and a sprinkle of red pepper flakes.
