Vegan Pea Soup
This Vegan Pea Soup is a healthy, vibrant soup which not only tastes delicious, it is packed full of nutrients too. I love to make a batch of this soup for healthy midweek lunches. Nothing beats having lunch prepared for those busy weeks when you’re running from one appointment to the next.
Start by sautéing onion and garlic before adding diced potatoes and peas, vegetable stock and finely chopped fresh herbs to taste. Simmer the soup on low heat for about 15 minutes. Remove from heat and add a tablespoon of lemon juice. Blend the soup with a hand held blender until smooth. Serve the vibrant pea green soup in white bowls for the ultimate color contrast!

The lemon juice made it slightly zesty so wasn't my personal favorite to be honest.
Dodged the parsley cause it tends to ruin the flavor of things, soup was great.

This is actually perfect with some cheesy garlic bread though I replaced normal cheese for veggie to keep it vegan ;)
