This Vegan Pea Soup is a healthy, vibrant soup which not only tastes delicious, it is packed full of nutrients too. I love to make a batch of this soup for healthy midweek lunches. Nothing beats having lunch prepared for those busy weeks when you’re running from one appointment to the next.
Start by sautéing onion and garlic before adding diced potatoes and peas, vegetable stock and finely chopped fresh herbs to taste. Simmer the soup on low heat for about 15 minutes. Remove from heat and add a tablespoon of lemon juice. Blend the soup with a hand held blender until smooth. Serve the vibrant pea green soup in white bowls for the ultimate color contrast!
To make this Vegan Pea Soup, you will need the following ingredients:
In a large pot, heat the vegetable oil over medium heat.
Sauté 1 diced onion and 3 minced cloves of garlic, stirring occasionally until translucent.
Add the diced potato and 300g of peas. Pour 700ml of broth or water into the saucepan and season with salt, pepper and finely chopped fresh herbs to taste.
Bring to a simmer and cook on low for about 15 minutes, until the potatoes and peas are tender.
Remove the saucepan from the heat. Add one tablespoon of lemon juice and blend until smooth with a hand held blender.
Serve the pea soup in bowls, garnished with plant-based yogurt or cream topped with a drizzle of olive oil, some thyme and a teaspoon of chopped peanuts.
