Vegan Split Pea Soup with Potatoes

I love this Vegan Split Pea Soup with Potatoes. It is so quick to prepare and is super filling, tasty and healthy too. It is packed with nutritious chunks of potato and bursting with the fresh flavors of lemon and dill.

Start by sauteing onion and celery in olive oil until tender. Add garlic, and saute briefly before adding vegetable broth, split peas, and diced potatoes to the pot and stir. Season and bring to a boil. Cover and simmer until the split peas are tender. If soup gets too thick, add more broth. Turn off the heat and stir in fresh dill and lemon juice. Taste and adjust seasoning as necessary. If the soup seems too thick, more water or vegetable broth can be added. Serve with an extra drizzle of olive oil and a squeeze of fresh lemon juice, if you want.
