To make the Vegan Strawberry Oatmeal Cookies, you will need the following ingredients:
Preheat the oven to 350 °F and line a baking sheet with parchment paper.
In a large bowl, combine 2 cups rolled oats, 2 mashed bananas, ½ a cup almond butter and mix well.
Fold in ¼ cup chopped strawberries and ¼ cup chocolate chips.
Form 16 equal balls of dough and place on the prepared baking sheet. Use your fingers to gently press and flatten each dough ball into a cookie shape.
Bake for 12 to 14 minutes or until golden around the edges. Don’t overbake!
Remove from the oven and leave to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Serve with a tall glass of milk and enjoy!
