It is simple to make too – simply whizz up all the ingredients in a blender on high speed until you have a smooth sauce. The two key ingredients in this recipe are the sun-dried tomatoes and the nutritional yeast. Nutritional yeast has a strong cheesy flavor which makes it a perfect substitute for cheese. Nutritional yeast is often sold as flakes or as a yellow powder and you should be able to find it in your local natural food store.
To make 5 Minute Vegan Sun-Dried Tomato Alfredo, you will need the following ingredients:
Place the coconut milk, sun-dried tomatoes, nutritional yeast, vinegar, salt, seasoning and black pepper in a blender. Blend on high speed until smooth.
Using a spatula, scrape down the sides of the blender to ensure all of the pieces are fully blended.
Check consistency and add vegetable broth if desired.
Serve with pasta, vegetables, rice or veggie noodles. Garnish with your favorite fresh herbs.
