You need this Watermelon Sherbet at your next party and I mean it this time! What a way to get the excitement flowing. I love experimenting with new recipes and this was a happy accident. A cool summer dessert or treat to be enjoyed perfectly at the poolside.
I blend sugar with zesty lemon juice, cold water, whole milk and unflavored gelatin which brings all the flavor to this desert from the 8 cups of fresh chopped watermelon. Frozen then scooped into glass bowls and served. I don’t even need to convince you much more!
To make Watermelon Sherbet, you will need the following ingredients:
In a large bowl, combine 8 cups of chopped watermelon with 1½ cups of sugar and ½ cup of lemon juice.
Place the bowl in the refrigerator for 30 minutes, to chill.
Once chilled, place ½ of the mixture in a blender and blend until smooth. Transfer to a large bowl and then repeat with the remaining half. Add to the bowl and set aside.
In a small saucepan, stir 2 envelopes of unflavored gelatin with ½ cup of cold water to combine. Cook over a low heat until the gelatin is fully dissolved.
Pour the gelatin mixture into the bowl of blended watermelon along with 2 cups of whole milk. Mix to combine well.
Using an ice cream maker, freeze the mixture according to the manufacturer's directions.
Serve immediately or freeze. Thaw for 20 minutes before serving and enjoy!
