Weeknight Spinach Quiche

I love this Weeknight Spinach Quiche recipe. It is so simple and it tastes absolutely delicious. The secret ingredient is Miracle Whip dressing which adds a certain tangy, creaminess to the quiche filling. Like mayonnaise, Miracle Whip is a very useful ingredient for savory fillings like this one as it is both oily and acidic.

To make this quiche, I always use a thawed pie crust to save extra time. I start by sautéing mushrooms and onions before stirring in spinach. I make the quiche filling by whisking eggs, milk and dressing. I then add the spinach mixture and mozzarella cheese. I pour the filling into the pie crust and top with bacon bits. Into the oven for 50 minutes and there you have it! A simple and delicious meal in just over one hour!

Took so much time but it wasn't too bad, had to stick it back in the oven 3 times cause it wasn't cooked right at first so maybe that's why i have an issue with the time.
