I love this Weeknight Spinach Quiche recipe. It is so simple and it tastes absolutely delicious. The secret ingredient is Miracle Whip dressing which adds a certain tangy, creaminess to the quiche filling. Like mayonnaise, Miracle Whip is a very useful ingredient for savory fillings like this one as it is both oily and acidic.

To make this quiche, I always use a thawed pie crust to save extra time. I start by sautéing mushrooms and onions before stirring in spinach. I make the quiche filling by whisking eggs, milk and dressing. I then add the spinach mixture and mozzarella cheese. I pour the filling into the pie crust and top with bacon bits. Into the oven for 50 minutes and there you have it! A simple and delicious meal in just over one hour!

Heat the oven

Spray a large nonstick skillet with cooking spray. Sauté 1 cup of sliced mushrooms and 1 chopped onion for 5 minutes over medium high heat.

Add spinach

Remove from the heat and add spinach.

Make filling

In a large bowl, whisk 4 eggs with â…“ cup of milk and â…“ cup of Miracle Whip dressing.

Add the spinach mixture and 1 cup of mozzarella cheese to the egg mixture. Mix well and pour into the thawed crust.
