5 oz White chocolate
¼ tsp Rum essence
To coat:
2-3 tbsp Cocoa powder

This recipe for White Chocolate and Dried Fruit Truffles is really easy to make and tastes like homemade candy! I love to make batches of these when I visit friends. A jar of these truffles always goes down a treat. They couldn’t be easier to make either.

To make this recipe, I soak apricots, dates, raisins, and rum essence in a bowl. I then process these with butter until a paste forms. Melt chocolate over a bain marie. Combine the melted chocolate and walnuts with the fruit paste. Shape the mixture into balls and roll each one in coconut or cocoa.

Steps to make White Chocolate and Dried Fruit Truffles

Soak apricots, dates, raisins, and rum essence

Place 1 cup each of apricots, dates, raisins in a large bowl with ¼ teaspoon of rum essence and a little water. Soak for about 1 hour.

Drain and blend to a paste

Drain any liquid from the fruit and transfer to a food processor. Add 5 tablespoons of butter. Blend until you have a smooth paste and transfer to a large bowl.

Melt chocolate

Place 5 ounces of white chocolate in a bowl over boiling water and melt.

Add chocolate to fruit paste

Add 2 cups of ground walnuts and the melted chocolate to the fruit paste. Stir well to combine. Transfer to a refrigerator and chill for about an hour.

Shape the truffles

Use a teaspoon to scoop out the mixture and shape into balls.

Dust with cocoa

Roll each truffle in coconut or cocoa powder to coat.
