These White Pizza Stuffed Zucchini Boats are a low carb side dish that the whole family will love. White pizza, in case you hadn’t heard of it, is pizza without the tomato sauce. The traditional red pizza sauce is replaced with ricotta and mozzarella. This recipe makes excellent use of these ingredients and replaces the pizza crust with zucchini.
To make these boats, start by removing and discarding the center of the zucchinis and place them cut-side up on a large baking sheet. Make the ricotta and mozzarella filling and use a spoon to fill the zucchini boats with the mixture. Top with mozzarella and bake until the zucchini is tender and the cheese is melted and turning golden brown along the top. Serve topped with basil.
To make my White Pizza Stuffed Zucchini Boats, you will need the following ingredients:
Preheat the oven to 375 °F.
Slice off the ends of the zucchini and cut in half lengthwise. Use a spoon or melon baller, gently scoop out seeds and discard. Place each hollowed out zucchini half cut-side up on a large baking sheet.
Mix ½ a cup of ricotta, 1 cup mozzarella, garlic, 2 tablespoons of basil, ½ a teaspoon of oregano, and ¼ teaspoon each of salt and pepper together in a medium sized bowl. Mix well.
Spoon the ricotta filling onto each zucchini half and top with the remaining shredded mozzarella.
Bake until the zucchini is tender and the mozzarella is melted and golden brown.
Serve warm, sprinkled with shredded basil leaves.
