250 g All-purpose flour
½ tsp Baking soda
¼ tsp Salt
175 ml Milk
1 tsp Lemon juice
3 tbsp Wild garlic pesto
60 g Parmesan cheese grated

These Wild Garlic Pesto Pinwheels make a great appetizer at a spring party. They look super cute and they are really easy to prepare in advance. I like to serve these with an extra bowl of wild garlic pesto on the side for dipping. My guests always love these tasty treats and I’m sure yours will too!

To make these pinwheels, start by combining the dry ingredients with a milk and lemon mixture to make a dough. Knead the dough lightly and roll it into a rectangle. Spoon wild garlic pesto on top of the dough and spread it out using the back of the spoon. Sprinkle the pesto with Parmesan cheese and roll the dough like a swiss roll. Cut into slices and sprinkle them with additional Parmesan before baking in the oven.

Steps to make Wild Garlic Pesto Pinwheels

Toast pine nuts

In a dry pan, spread 75 grams pine nuts in a single layer and toast them until golden brown, stirring frequently.

Prepare pesto

Place 100 grams wild garlic, toasted pine nuts, 75 grams Parmesan, 100 ml olive oil, a pinch of salt and black pepper in a food processor. Blitz everything until it reaches the desired consistency.

Heat oven

Preheat the oven to 390 °F and line a baking sheet with parchment paper.

Mix dry ingredients

In a large mixing bowl, combine 250 grams of flour with ½ teaspoon of baking soda and ¼ teaspoon of salt.

Combine wet ingredients

Mix 175 milliliters of milk with 1 teaspoon of lemon juice in a bowl.

Add wet ingredients

Create a well in the center of the dry ingredients and pour in the milk and lemon mixture. Mix well to make a dough.

Knead

Transfer the dough to a floured surface. Knead lightly for a few minutes before rolling the dough out to a 1-cm thick rectangle.

Add pesto and cheese

Spoon 3 tablespoons of pesto onto the rolled dough. Sprinkle with 40 grams of grated Parmesan cheese.

Roll up dough

Roll up the dough like a swiss roll. Slice the dough into round slices.

Top with Parmesan

Lay slices on a baking sheet. Sprinkle the remaining Parmesan cheese over the pinwheels.

Bake

Bake in the oven for about 15 minutes until the pinwheels are a golden brown color.

Serve

Serve with extra garlic pesto on the side for dipping.
