I made this Zucchini Brunch Bake recently when some of my cousins came to stay with me. They were in town for a family wedding, and the morning after I needed a dish that would feed everyone. I didn’t want to make anything too complicated after a late night, so I settled on this brunch bake.

It’s so simple to put this together. Simply mix all the ingredients together in a large bowl to make a batter. Pour it into a dish and bake for 25-30 minutes. So easy, so delicious! If you are feeding a crowd, simply double the recipe.

Heat the oven and prepare a baking dish

Preheat the oven to 350 °F. Lightly grease an 8x8 inch baking dish.

Combine biscuit mix, cheese and seasonings

In a large bowl, mix together the biscuit mix, cheese, garlic powder, seasoning salt, oregano, salt, pepper and parsley.

Mix in the onions, eggs, oil and zucchini

Add the onion, eggs and oil and mix well. Stir in the zucchini.
