I have a confession – I absolutely love rice. But sometimes, when I decide to cut down on the carbs, I swap out grains for low-carb veggies. And I found cauliflower rice a simple and tasty option that works for me. Besides, this dish only requires ten minutes of cooking time. And that’s another benefit of using cauliflower instead of rice – you don’t need to wait for the rice to cook through.
To make the 10-Minute Healthy Cauliflower Rice, you will need the following ingredients:
In a food processor, place 24 ounces cauliflower florets and pulse for about 2 minutes until it resembles rice.
Whisk together 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 tablespoon grated ginger, and ¼ teaspoon white pepper in a small bowl.
In a medium skillet over low heat, heat 1 tablespoon vegetable oil and add 2 beaten eggs. Cook 2 minutes per side, flipping once, until cooked through. Let cool, and then dice.
In a wok or large skillet over medium-high heat, heat remaining 1 tablespoon vegetable oil and add 1 diced onion and 2 cloves minced garlic. Cook, stirring, until soft and translucent, about 3 minutes.
Add in 6 ounces chopped broccoli florets, 2 grated carrots, ½ cup corn, and ½ cup peas. Cook, stirring, for 3 minutes until tender.
Add in cauliflower rice, 2 sliced green onions, cooked diced eggs, and soy sauce mixture. Cook while stirring constantly until cauliflower is tender, about 3-4 minutes.
Sprinkle with sesame seeds and serve.
