This 10-Minute Healthy Cauliflower Rice is a lightened-up stir-fry recipe that tastes better than take-out and contains half less carbs! It is also packed full of healthy veggies and flavored with Asian-inspired spicy sauce. Yummy!

I have a confession – I absolutely love rice. But sometimes, when I decide to cut down on the carbs, I swap out grains for low-carb veggies. And I found cauliflower rice a simple and tasty option that works for me. Besides, this dish only requires ten minutes of cooking time. And that’s another benefit of using cauliflower instead of rice – you don’t need to wait for the rice to cook through.

    Whisk together 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 tablespoon grated ginger, and ¼ teaspoon white pepper in a small bowl.

    In a medium skillet over low heat, heat 1 tablespoon vegetable oil and add 2 beaten eggs. Cook 2 minutes per side, flipping once, until cooked through. Let cool, and then dice.
