It only takes 4 easy steps to make this recipe. First, microwave the pierced sweet potato until a paring knife slides right in with no resistance. A medium sweet potato will take about 6 minutes to cook. If your potato is larger, continue to microwave it in 1-minute bursts until the potato is cooked through. Flip the spuds every 2 minutes to ensure even cooking. Next, slice the potato lengthwise and score the flesh, being careful not to cut all the way through the skin. Then put a few thin butter slices in between some of the squares. Season with a pinch of salt and black pepper, and add a sprinkle of Parmesan cheese on top. Finally, broil the potato until crispy.     Pierce a whole sweet potato all over with a fork a few times. Place it in the microwave on medium-high for 6 to 7 minutes (depending on the size of your sweet potato) until a paring knife slides right in with no resistance. Flip your sweet potato every 2 minutes to ensure even cooking.
