Looking for some inspiration for lunch today? This recipe for Easy 15-Minute Roasted Sweet Potatoes is sure to satisfy! It’s a superfast, minimal-effort dish that requires just 5 pantry staple ingredients and a sweet potato. A sprinkle of Parmesan cheese is completely optional, though very delicious. You can also swap it out for a vegetarian alternative to keep the recipe vegetarian-friendly.

It only takes 4 easy steps to make this recipe. First, microwave the pierced sweet potato until a paring knife slides right in with no resistance. A medium sweet potato will take about 6 minutes to cook. If your potato is larger, continue to microwave it in 1-minute bursts until the potato is cooked through. Flip the spuds every 2 minutes to ensure even cooking. Next, slice the potato lengthwise and score the flesh, being careful not to cut all the way through the skin. Then put a few thin butter slices in between some of the squares. Season with a pinch of salt and black pepper, and add a sprinkle of Parmesan cheese on top. Finally, broil the potato until crispy. Serve topped with a dollop of sour cream and a pinch of chives. You just can’t have too many easy recipes in your back pocket!
