To make this sheet pan dinner, start by place carrots and potatoes on a baking sheet. Drizzle with oil and season. Place chicken breasts in the center of the vegetables and again, season and drizzle with oil. Bake in the oven until cooked through. To make Apricot Chicken Sheet Pan Dinner, you will need the following ingredients:
Preheat the oven to 375 °F. Line a large rimmed baking sheet with parchment paper.
Mix 2 teaspoons of salt, 1 teaspoon of garlic powder, ½ a teaspoon of black pepper, ½ a teaspoon of paprika and ¼ teaspoon of onion powder together in a small bowl.
Place 1 pound of potatoes and 3-4 sliced carrots on a baking sheet. Drizzle with 1 tablespoon of the oil and sprinkle with half of the seasoning mix. Toss to coat.
Create a space in the center of the potatoes and carrots. Place 4 chicken breasts in the center of the pan and drizzle with remaining 1 tablespoon oil and sprinkle with the remaining seasoning mix.
Place the baking sheet in the oven and cook for 25-30 minutes until everything is cooked through.
Whisk ¼ cup of apricot jam with 1 tablespoon each of soy sauce, Worcestershire sauce, cider vinegar and 1 teaspoon of cornstarch. Microwave on high at 30 second intervals, stirring in between, until the glaze is slightly thickened.
Brush the chicken with apricot glaze and serve immediately.
