In a medium bowl, empty tuna packets and use a fork to shred the meat.

Add dijon mustard, mayonnaise or mashed avocado, black pepper, and cayenne pepper and mix together until well combined.

Warm the tortilla wraps in the microwave for a few seconds or in the oven for a few minutes.

Arrange avocado slices as the base over the wraps and then add a layer of a few spinach leaves. Top with a spoonful of prepared tuna salad and then stack shredded carrots and red onion, if using, along the sides. Sprinkle roasted chickpeas around, if you wish. Begin closing the wrap by folding in the edges first and then rolling upwards.
