This Bacon Sriracha Potato Salad is a spicy take on an all-time classic. The kick from the Sriracha will liven up your meals this summer. This is the perfect recipe for your next picnic or barbecue. It tastes amazing with grilled steak.

This salad is simple to make too. Start by cooking potatoes and bacon. Drain the potatoes and transfer to a large mixing bowl. Season with salt and add vinegar. Let the potatoes sit until slightly cooled. Make the dressing by combining mayo, sour cream, and sriracha chili sauce in a small bowl. Add the potatoes and mix well. Top with crispy bacon, chopped green onion, and paprika and serve at room temperature. I like to serve this salad with a bottle of Sriracha on the side if anyone feels like adding an extra punch of spice.

Steps to make Bacon Sriracha Potato Salad

Prepare potatoes

Peel 3 pounds of potatoes and chop into ¾-inch cubes. Place them in a large saucepan and cover with cold water.

Boil the potatoes

Bring to a boil over high heat. Once a rolling boil is reached, reduce heat to low and simmer for about 8 minutes until the potatoes are fork tender. Drain and transfer the potatoes to a large bowl. Add ¼ teaspoon of salt and 2½ tablespoons of vinegar and combine. Leave to cool for about 15 minutes.

Cook bacon

As the potatoes cook, line a rimmed baking sheet with parchment paper. Place 3-4 slices of bacon on the baking sheet. Set the oven to 400 °F and place the baking sheet on the center rack. Bake for about 20 minutes until the bacon is crispy and golden.

Make dressing

Combine ¾ cup of mayonnaise, ¼ cup of sour cream, and 1½ tablespoons of Sriracha chili sauce in a small bowl.

Dress potatoes

Once the potatoes have cooled, fold in the dressing using a rubber spatula.

Top the dressed potatoes with crispy bacon, chopped green onion, and a sprinkle of paprika

Serve

Serve at room temperature with the bottle of Sriracha on the side.
