This Bacon, Lettuce, Tomato and Avocado Salad is a dieter’s delight! When I hear there is bacon in a salad, the option already immediately runs to the top of my list.
The perfect packed lunch to take to work or school, giving you the right balance of nutrients that your body needs to have a successful day. Because, all good days have a really hearty salad in them!
To make Bacon, Lettuce, Tomato and Avocado Salad, you will need the following ingredients:
In a skillet, cook 8 bacon strips until crispy, then set aside on a plate, lined with paper towels to drain.
In a large salad bowl, toss 1 head of chopped romaine lettuce, 2 handfuls of halved cherry tomatoes, ½ chopped cucumber, 2 chopped avocados and the 8 crispy bacon strips.
In a small mixing bowl, whisk 4 tablespoons olive oil, 2 tablespoons balsamic vinegar, 1 teaspoon mustard, 1 teaspoon salt and 1 squeezed lemon juice together until well combined.
Toss salad with prepared salad dressing, just before serving and enjoy!
