I love visiting the fishmonger and the last time I bought some flounder he gave me this Baked Stuffed Fish Fillet recipe to try. It might just be the best visit I have ever made and he was also more than happy for me to share it with you! His idea is to line fish strips in muffin cups and fill them with an onion, celery, bread cube and sage, stuffing that is indescribable. I don’t know why I hadn’t done this before! Enjoy with some extra hot French fries!
To make Baked Stuffed Fish Fillet, you will need the following ingredients:
Preheat oven to 350 °F and generously grease a muffin tin with butter.
Line the greased muffin cups with fish strips and lightly season with salt.
In a small skillet, melt 3 tablespoons of butter and saute 3 tablespoons of finely chopped onions and ½ cup of finely chopped celery until translucent.
Add 1 teaspoon of salt, ⅛ teaspoon of ground black pepper, 1 teaspoon of crumbled, dried sage and 4 cups of bread cubes and mix to combine. If stuffing is a little dry, you may add some hot water.
Portion about a tablespoon of stuffing into each fish-lined cup.
Add a dot of butter on top of each stuffing serving and garnish with sprinkles of chopped parsley.
Bake in the preheated oven for about 20 minutes until fish flakes easily.
Serve with a wedge of lemon, if you wish.
