I love these Beet and Cheddar Crackers. They are delicious and crispy and perfect to serve with cheese or hummus or your favorite cracker topping. The addition of beetroot puree to the dough gives these crackers a pink hue.
To make these crackers, start by cooking beets and shallots until tender. If the mixture starts to get dry, add a few tablespoons of water or beet juice to the saucepan. Once cooked, blend to make a smooth mixture and set aside. In a food processor, make the dough using flour, butter and cheese. Add the beets to the flour mixture. Chill the dough in the fridge and roll it out to make crackers. The thinner the dough, the crispier they will be! Cut the cracker shapes using a knife or wavy pizza cutter. Punch holes in the top of each cracker using a fork. Sprinkle with kosher salt and bake in the oven.
To make the Beet and Cheddar Crackers, you will need the following ingredients:
Melt 1 teaspoon of butter in a small saucepan over medium heat. Add 3 tablespoons of beets and 1 diced shallot. Sprinkle lightly with salt and simmer for about 5-8 minutes.
Blend the beet and shallot mixture to make about ¼ cup of puree.
Combine 1 cup of flour and ½ a teaspoon of salt in a food processor and pulse until combined. Add 6 tablespoons of chopped butter, and pulse the mixture until well combined and mealy. Add 1 cup of grated Cheddar cheese and pulse.
Add the beet puree to the food processor and pulse until you get a uniform, moist dough.
Wrap the dough in wax paper, and form it into a disc. Chill in the refrigerator for at least 30 minutes.
Preheat the oven to 325 °F and line 2 baking sheets with parchment paper.
Roll out the dough into a very thin layer.
Cut the thinly rolled dough into squares using a pastry cutting wheel or a sharp knife.
Using a fork, punch holes in each cracker.
Place the crackers on the prepared baking sheets and bake for about 15 minutes.
Leave to cool on a wire rack before serving.
Serve with cheese or hummus or with your favorite cracker topping and enjoy!
