2 tbsp Lime juice freshly squeezed
1 tbsp Maple syrup or another liquid sweetener
2 tbsp Fresh mint finely chopped
¾ tsp Salt
Black pepper to taste
For salad:
5 cups Arugula
1 cup Blackberries
¾ cup Blueberries
1 Avocado sliced
1 ½ cups Cucumber sliced thinly
⅓ cup Vegan feta cheese or regular feta
⅓ cup Hazelnuts toasted

This salad is sweet and salty with a combination of blackberries, blueberries, avocado, and feta cheese, which get tossed with peppery arugula and coated in a lime, olive oil, and black pepper vinaigrette. I like to keep it simple with just the arugula but feel free to add any greens of your choice. All the flavors work so well together and pair wonderfully with grilled seafood or poultry. Enjoy!

Prepare vinaigrette

In a mason jar, combine ⅓ cup olive oil, 2 tablespoons freshly squeezed lime juice, 1 tablespoon maple syrup, 2 tablespoons finely chopped fresh mint, ¾ teaspoon salt, and
black pepper to taste. Screw the lid on the jar, and shake vigorously to mix the ingredients through.

Assemble salad

Add 5 cups arugula to a large serving bowl or platter. Top with 1 cup blackberries, ¾ cup blueberries, 1 sliced avocado, 1 ½ cups thinly sliced cucumber, ⅓ cup vegan or regular feta, and ⅓ cup toasted hazelnuts.

Toss in the prepared vinaigrette and serve.
