Ingredients

4 Large eggs
¼ cup Sour cream
¼ cup Mayonaise
¼ cup All-purpose flour
½ tsp Baking powder
½ tsp Cornstarch
1 lb or 6 cups Green cabbage finely sliced
½ tsp Salt
2 tbsp Dill chopped
2 tbsp Green onion finely chopped, plus more to garnish
4 oz Mozzarella 1 ½ cups shredded

Cabbage Casserole may not sound very appetizing, but this recipe is like a creamy yet healthy quiche – without the pastry base. You won’t be able to resist it if you try it!

The base of this casserole is made from shredded cabbage with added dill and green onion. I make a batter from eggs, sour cream, mayo, flour and cornstarch which I pour over the cabbage before baking in the oven.

So, how do you make Cabbage Casserole?

Steps to make Cabbage Casserole

Heat the oven and set a casserole dish aside

Preheat the oven to 375°F and set aside a 9 inch round pie dish.

Mix eggs, sour cream and mayo

Place the eggs, sour cream and mayo In a medium mixing bowl and whisk until fully blended.

Mix dry ingredients with the wet

In a separate mixing bowl, mix flour, baking powder and corn starch together. Add the dry mixture to the batter and beat until completely smooth.

Prepare the cauliflower

In another mixing bowl, place the thinly sliced cabbage and sprinkle with salt. Mix cabbage with your hands for 30 seconds to soften it. Add the dill and green onion.

Assemble the casserole

Place the cabbage in the base of a casserole dish and spread it out in an even layer. Pour the batter over the top and sprinkle mozzarella on top.

Bake

Bake in the oven for about 35 min golden on top.

Serve

Serve slices of the cabbage casserole with a crisp side salad.
