In a large pot over medium heat, heat 2 tablespoons of olive oil and add 1 chopped onion, 2 chopped carrots and 2 chopped celery stalks.
Add 1 chopped red bell pepper, 2 cloves of minced garlic, 1½ teaspoon of Italian seasoning, ½ teaspoon of pepper, and ¼ teaspoon of salt. Continue cooking and stirring for about 2 minutes.
Add 8 cups of vegetable broth, 1 sliced cabbage head and 1 chopped tomato and increase the heat to bring to a boil, then, reduce the heat, cover with a lid and cook on a simmer for about 15-20 minutes until all the ingredients are softened.
Remove from the heat, stir in 2 teaspoons of white wine vinegar and serve! Enjoy.
