Carolina Fish Cakes

If your family loves seafood, give these Carolina Fish Cakes a try. Richly flavored and delicious, these are budget-friendly and so easy to make. This recipe is inspired by Carolina crab cakes, but it uses a white-fleshed fish filet instead of the crabmeat version. I use cooked cod here, but any white fish will work well. These crisp-edged fish cakes are outstanding when served with quick tartar sauce or even just a squeeze of lemon. The recipe yields 12 fish cakes. 

The recipe starts off by cooking the potatoes and pushing them through a masher. Next, sauté the veggies and add the flaked fish. Add in the flour, Parmesan cheese, and the seasonings and combine with the mashed potatoes and some milk. Gently mix and remove from heat. Shape the fish mixture into 12 equal fish cakes and roll each one in bread crumbs. Bake in the oven for 10 minutes, then flip and bake until golden brown. Serve immediately and enjoy!

Steps to make Carolina Fish Cakes

Preheat oven and prepare baking sheets

Preheat the oven to 400 °F and grease two baking sheets.

Cook potatoes

Bring 3 cups of water to a boil. Once at a boil, add in 2 peeled potatoes and cook until tender but still firm, about 15 minutes. Drain the potatoes well and mash. Reserve 1 cup mashed potatoes and set aside any remaining for another use.

Sauté onions, peppers, and celery

In a large saucepan, melt 2 tablespoons butter and add ⅓ cup minced onions, ⅔ cup chopped red bell pepper, and ⅓ cup chopped celery. Sauté over medium-high heat until tender.

Add fish

Turn heat to low and fold in 3 ½ cups cooked flaked cod.

Make fish cake mixture

Slowly mix in 4 tablespoons all-purpose flour, 2 tablespoons grated Parmesan cheese, 1 teaspoon Old Bay seasoning, ¼ teaspoon mustard powder, ½ teaspoon salt, ground black pepper to taste, 1 cup mashed potatoes, and ½ cup milk. Gently mix to combine. Remove the saucepan from heat.

Make fish cakes

With floured hands, shape the mixture into 12 even 3-inch-wide, ½-inch-thick cakes and coat with bread crumbs.

Bake the fish cakes for 10 minutes, then flip and bake for another 15 minutes or until golden brown.

Serve the fish cakes with a large dollop of homemade tartar sauce and enjoy.
