Carolina Fish Cakes

This recipe is inspired by Carolina crab cakes, but it uses a white-fleshed fish filet instead of the crabmeat version. I use cooked cod here, but any white fish will work well. These crisp-edged fish cakes are outstanding when served with quick tartar sauce or even just a squeeze of lemon. The recipe yields 12 fish cakes.Â
The recipe starts off by cooking the potatoes and pushing them through a masher. Next, sauté the veggies and add the flaked fish. Add in the flour, Parmesan cheese, and the seasonings and combine with the mashed potatoes and some milk. Gently mix and remove from heat. Shape the fish mixture into 12 equal fish cakes and roll each one in bread crumbs. Bake in the oven for 10 minutes, then flip and bake until golden brown. Serve immediately and enjoy!
