The main ingredient for the quiche filling is the best blank canvas vegetable: cauliflower. To make the filling, I roast the cauliflower, to bring out its natural sweetness, together with mushrooms. Then I mix cream and eggs, and add roasted cauliflower and mushrooms. Instead of a classic pastry quiche crust, I use a quinoa crust. Quinoa is a fantastic wheat-free alternative and it makes a lighter crust than traditional pastry.
To make Roasted Cauliflower, Mushroom and Goat Cheese Quiche with Quinoa Crust, you will need the following ingredients:
Preheat the oven to 375 °F.
Place the quinoa and water in a saucepan and bring to a boil. Once boiling, turn the heat down low and simmer while covered, until the quinoa is tender and most of the water has been absorbed. This should take about 15 minutes. Remove from the heat and allow to sit with the cover on for 5 minutes.
Combine the cooked quinoa, egg and parmesan. Press the mixture into the bottom of a pie dish and bake for about 10 minutes in the preheated oven until lightly brown on top. Remove from the oven and set to one side.
Increase the oven temperature to 400 °F.
Mix the cauliflower and mushrooms with the oil, salt and pepper. Place them in a single layer on a baking sheet. Roast in the oven for about 20-30 minutes until they start to caramelize. Remove from the oven and turn the heat down to 375 °F.
Mix the eggs, milk, thyme, salt and pepper. Combine the cauliflower and mushrooms with egg and milk mixture. Pour the filling mixture into the quinoa crust. Sprinkle the top with crumbled goat cheese.
Bake for about about 30-35 minutes until the quiche is golden brown on top and the filling has set. If you shake the dish, the mixture shouldn’t wobble.
Serve this quiche with a green salad on the side.
