These Herbed Cauliflower and Quinoa Meatballs are a hearty and filling vegetarian recipe for the university loved meatball replacement. No one will even notice the difference. Steps to make Herbed Cauliflower Quinoa Meatballs

Preheat oven and prepare baking sheet

Preheat oven to 400 ºF and line a baking sheet with baking parchment paper.

Combine cauliflower and quinoa

In a large mixing bowl, combine cauliflower rice and quinoa.

Add eggs

Add eggs to large bowl of cauliflower and quinoa.

Add remaining ingredients

Add panko, garlic, thyme, red pepper flakes, salt and pepper and mix well until evenly combined.

Prepare balls

Roll 2 tablespoons of the mixture per ball into about 16 balls and transfer to the lined baking sheet.

Bake

Bake in preheated oven for 30 minutes, flipping 15 minutes into cooking.

Serve

Serve hot with a starch and a sauce of your choice.
