2 tbsp All-purpose flour
½ lb Mushrooms sliced
¼ cup Onion chopped
2 cloves Garlic finely chopped
½ tsp Garlic powder
½ tsp Cayenne pepper
1 ½ cups Heavy cream
½ cup Cheddar-Monterey blend
1 (10-ounce) box Broccoli frozen chopped, thawed and drained
2 cups Cheddar-Monterey blend shredded
3 cups Cooked rice
Salt to taste
Black pepper freshly ground , to taste

I love a casserole for a handy midweek dinner and this Cheesy Mushroom and Broccoli Casserole does not disappoint. My family loves it because it tastes absolutely delicious and I love it because it is so simple to prepare and cook.

I start my casserole by making a roux – a mixture of flour and butter which is cooked together and used to thicken sauces. I add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock to the roux before adding broccoli, rice and cheese. I place it all in an ovenproof dish and bake for 20 minutes. Simple and delicious!

Heat the oven and prepare a casserole dish

Preheat the oven to 425 °F and grease a casserole dish with butter.

Make a roux

Melt the butter and flour together in a large saucepan over medium heat. Cook while stirring until golden brown.

Make the casserole sauce

Add the mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock to the saucepan.

Add the remaining ingredients

Add the broccoli, rice and a cup of the cheese to the saucepan. Season to taste with salt and pepper.

Place the casserole mixture in the buttered dish and sprinkle the remaining shredded cheddar on top. Bake the casserole for about 20 minutes until the cheese is bubbling and golden.

Serve warm.
