Simple but delicious, this Chicken Oreganato recipe can be cooked up in no time! Oregano is the most classic of Italian herbs. I use it in so many of my dishes, it really lifts a pasta bake and is perfect for sprinkling over pizza. With meat, it just adds a classic Italian twist, elevating a simple dish into something special.
This recipe is incredibly simple. Chicken thighs, plus four classic Mediterranean ingredients. The key is to rub the chicken with the herbs and seasoning, and then to keep it basted while it’s cooking. This way you make sure the meat absorbs all the great flavors, and stays juicy and moist while in the oven.
To make Chicken Oreganato, you will need the following ingredients:S
Preheat oven to 450°F. Lightly grease a rectangular baking dish.
Wash the chicken thighs under running water and pat dry with paper towels.
In a small bowl, combine the oregano with the salt and pepper.
Sprinkle the oregano seasoning over the chicken and rub into the skin. Lay the chicken thighs in the baking dish.
In the same bowl, whisk the lemon juice and oil together and pour half of it evenly over the chicken.
Bake the chicken for 20 minutes.
Remove the dish from the oven, turn the thighs over and pour the remaining dressing over the top. Bake for another 15-12 minutes until cooked through.
The chicken can be served straight from the oven, at room temperature, or cold after chilling.
