Chicken and Rice Patties

Turn your family-favorite fried rice into these delicious Chicken and Rice Patties perfect for school lunches and even as finger food for a party. Made with only 7 simple ingredients, these baked rice cups are ready in less than 30 minutes. What I also love about this recipe is that the patties are baked in a muffin pan, which makes them the perfect portion size and eases the clean up. 

First, sear the chicken breast in a hot skillet, then shred the chicken and set aside. In a bowl, whisk eggs and add the cooked chicken and rice, grated carrots, spring onions, and ¾ of the grated mozzarella cheese. Mix well and divide between the greased muffin cups. Top with the remaining cheese and bake until golden brown. Serve warm or cool completely to serve lately.

    Preheat oven

    Preheat the oven to 200 °C/ 400 °F.

    Cook chicken

    In a medium skillet, heat ½ tablespoon olive oil and cook 1 chicken breast until it starts to brown.

    Shred chicken

    Once cooked, remove the chicken from the skillet and use a fork to shred the meat. Set aside.

    In a large bowl, whisk 3 eggs and add 3 cups cooked rice, the shredded chicken, 1 cup grated carrots, 3 finely sliced spring onions, and about ¾ grated mozzarella cheese and mix well.

    Spray a muffin pan with cooking spray and divide the rice mixture evenly between the muffin cups. Top with the remaining mozzarella cheese.
