To make the Chicken Stuffed Mushrooms, you will need the following ingredients:
Heat the oven to 400 °F.
Wipe mushrooms with a damp paper towel. Remove the base of each mushroom and scoop out some of the center. Finely chop the stems and the mushroom pieces you've scraped out. Set aside.
Melt 2 tablespoons of butter over medium-high heat. Add the chopped mushrooms and diced onion and saute while stirring frequently for 10-12 minutes, until the onions are soft and beginning to turn golden. Season with ½ teaspoon of salt.
