This Chicken Zoodle Soup is a really healthy and wholesome soup that is so nourishing. A perfect soup as the weather starts to turn a bit cooler.
For this soup, I start by seasoning and cooking chicken. Saute garlic, onion, carrots, and celery until tender before stirring in thyme and rosemary. Add chicken stock and zucchini noodles and return the chicken to the pot. Reduce the heat and simmer until the zucchini noodles are tender. Stir in lemon juice and season with salt and pepper to taste. Serve garnished with freshly chopped rosemary and parsley, if desired.
To make the Chicken Zoodle Soup, you will need the following ingredients:
Place 1 tablespoon olive oil in a large stockpot or Dutch oven and heat over medium heat.
Season chicken all over with salt and pepper. Cook the chicken in the stockpot for 2-3 minutes until golden all over. Remove from the pot and set aside.
Add the remaining tablespoon of oil and sauté 3 minced cloves of garlic, 1 diced onion, 3 peeled and diced carrots, and 2 diced stalks of celery for 3-4 minutes.
Add ½ teaspoon of dried thyme and ¼ teaspoon of dried rosemary. Cook for about one minute until fragrant.
Whisk in chicken stock and add 1 bay leaf and 2 cups of water. Bring the soup to a boil.
Stir in 1 pound of zucchini noodles and the cooked chicken. Reduce the heat and simmer the soup for 3-5 minutes until the zucchini is tender.
Stir in 2 tablespoons of lemon juice. Season with salt and pepper to taste.
Serve immediately, garnished with freshly chopped parsley and rosemary.
