This Cold Soba Noodle Salad is one of my favorite salads to make as the weather starts to improve and I’m no longer craving the comfort food required in cold weather. Two of my favorite Asian flavors combine in the dressing for this salad: sesame oil and rice vinegar. Yum!
Making this cold soba noodle salad recipe is really simple to make too. Start by cooking the soba noodles. Once the noodles are cold, combine them with cucumber, carrot, bell pepper, radish, spring onion, and cilantro in a salad bowl. Make a dressing from oil, lime juice, ginger, vinegar, sesame oil, honey, and chili sauce.
To make my version of Cold Soba Noodle Salad, you will need the following ingredients:
Follow the package directions to cook the soba noodles. Rinse under cold water and drain well. Set aside to cool.
Mix the cold soba noodles with 4 thinly sliced cucumbers, 2 medium carrots, 1 thinly sliced red or yellow bell pepper, 6 thinly sliced radishes, 4 spring onions, and 2 tablespoons of chopped fresh cilantro and 1 tablespoon of sesame seeds in a large bowl.
Combine 2 tablespoons of grapeseed or canola oil with the juice of one lime, 1 tablespoon of grated fresh ginger, 1 tablespoon of rice wine vinegar, 1 teaspoon of sesame oil, 1 teaspoon of honey and 1 teaspoon of chili sauce in a small bowl or jug. Season with salt and pepper and whisk until fully combined.
Add the dressing to the salad and toss well to combine. Taste and adjust seasoning if necessary.
Garnish with sesame seeds and serve immediately or you can keep this salad in the refrigerator for up to 24 hours. Toss well before serving.
