To make Corn Dog Mini Muffins, you will need the following ingredients:
Preheat oven to 375 °F and gently grease a 24-cup mini muffin tin with nonstick spray.
In a large bowl, stir the flour, cornmeal, baking soda and salt together.
In a separate bowl, whisk the buttermilk, butter, sugar and eggs together until combined.
Using a rubber spatula, mix ingredients from both bowls until just moist.
Pour 1 tablespoon of corn batter into each mini muffin cup and place 1 hot dog piece into the center.
Bake in preheated oven for about 8-10 minutes until golden brown.
Cool slightly, on a wire rack before serving.
