1 tbsp Unsalted butter for greasing
4 cups Milk full or reduced fat
⅓ cup Sugar white
2 tsp Vanilla extract
¾ cup White rice medium grain white rice, uncooked - definitely the best for rice pudding
½ cup Sultanas or raisins
¾ tsp Cinnamon
½ cup Heavy cream (or knob of butter)

This Heavenly Creamy Cinnamon Rice Pudding is a delicious gluten free dessert. It’s creamy and delicious with a hint of cinnamon. This rice pudding is a giant bowl of comfort food. To make it even more special, serve with a scoop of vanilla ice cream on top.

To make this delicious rice pudding, start by combining milk, sugar, and vanilla in a saucepan. Bring to a simmer while stirring until the sugar dissolves and the surface is foamy. Do not allow the mixture to boil or it will split. Place the rice, sultanas, and cinnamon in a baking dish and pour over the milk mixture. Stir briefly before covering with a lid or foil. Bake while stirring every 20 minutes to break up the rice that starts to set on the base. Remove the rice from the oven. Add cream and stir. Serve straightaway. Add a scoop of vanilla ice cream to elevate this dish from delicious to mind-blowing!

Steps to make Heavenly Creamy Cinnamon Rice Pudding


Heat oven and prepare casserole dish


Preheat the oven to 350 °F. Lightly grease a 3-quart casserole dish with butter.


Heat milk, sugar, and vanilla


Place 4 cups of milk in a saucepan with ⅓ cup of sugar and 2 teaspoons of vanilla over medium high heat. Bring the mixture to a simmer. Stir to dissolve the sugar, but do not bring to a boil or it might split.


Assemble pudding


Place ¾ cup of rice in the prepared baking dish with ½ a cup of sultanas and ¾ teaspoon of cinnamon. Pour over the milk mixture and stir briefly before covering with a lid or foil.




Bake the pudding in the oven for 1 hour. Remove from the oven to stir every 20 minutes in order to separate any rice that starts to set on the base.


Add cream


After 1 hour, remove the casserole from the oven and add ½ a cup of cream. Stir well.



Serve immediately as it is or with a scoop of ice cream on top.
