These Creamy Kiwi Key Lime Popsicles are a delicious summer treat that your whole family will love. These dairy-free popsicles are flavored with delicious key limes, the smaller, seedier, higher acidity limes which get their name from the Florida Keys.
To make these delicious popsicles, start by blending 3 kiwis, the juice of one key lime, coconut milk, honey, and vanilla until frothy. Take the reserved kiwi and slice thinly to place on either side of the popsicle molds. Pour the mixture carefully into the molds and cover. Make sure you leave at least ½ an inch of space at the top. Freeze overnight and then enjoy.
To make Creamy Kiwi Key Lime Popsicles, you will need the following ingredients:
Place 3 kiwis in a food processor or blender with the juice of one key lime, 1 can of coconut milk, ¼ - ½ cup of honey, and ½ a teaspoon of vanilla extract. Blend for 30 seconds until frothy.
Slice the reserved kiwi thinly and place the slices on either side of popsicle molds.
Transfer the kiwi lime mixture to the popsicle molds leaving ½ an inch of space at the top.
Freeze overnight until the pops are solid.
Serve straight from the freezer.
