350g Red cabbage thinly sliced
3 Carrots coarsely grated
20g Parsley roughly chopped
2 Apples quartered, cored and sliced
2 sticks Celery sliced or a handful of radishes
3 tbsp Pine nuts toasted
1 tbsp Pumpkin seeds
1 tbsp Sunflower seeds
1 tbsp Linseeds
For the dressing
2 tsp Ginger root grated
1 tsp Honey clear
2 tbsp Lemon juice
4 tbsp Olive oil light

Some of my friends call me the Salad Queen and it might just be this Crunchy Cabbage Salad that wins their hearts everytime. I pride myself on finding healthy recipes that still look glamorous and taste even more exciting. By adding pine nuts, pumpkin seeds, sunflower and linseeds to the salad, this bowl has enough protein, healthy fats and fiber for a full small snack meal. Of course, you can compliment it with any protein of your choice, if you wish!

To make Crunchy Cabbage Salad, you will need the following ingredients:

Steps to make Crunchy Cabbage Salad

Prepare salad

In a large salad bowl, toss together 350g of shredded cabbage, 3 coarsely grated carrots, 20g of roughly chopped parsley, sliced apples and 2 sliced celery sticks.

Add nuts and seeds

Add 3 tablespoons of toasted pine nuts, 1 tablespoon of pumpkin seeds, 1 tablespoon of sunflower seeds and 1 tablespoon of linseeds.

Prepare dressing

In a small bowl, whisk 2 teaspoons of grated root ginger, 1 teaspoon of clear honey, 2 tablespoons of lemon juice and 4 tablespoons of light olive oil until well combined.

Dress salad

Pour prepared dressing over the salad and toss to evenly coat.

Serve

Serve straight away and enjoy!
