Ingredients

For the pesto dressing
3 tbsp Pesto
1 tbsp Lemon juice
2 tsp Lemon zest grated
1 ½ tsp Dijon mustard
¼ tsp Garlic salt
¼ tsp Black pepper
For the salad
2 ½ cups Summer squash yellow, thinly sliced
1 ¾ cups Cucumbers mini, thinly sliced
¾ cup Fresh peas
½ cup Parmesan cheese shredded
¼ cup Green onion thinly sliced
To serve
5 strips Bacon thick-sliced, cooked and crumbled

This Crunchy Lemon-Pesto Garden Salad is a real celebration of all your garden’s vegetable patch this summer. The dressing for this salad is a flavor sensation – it will transport you all the way to Italy!

Start by preparing the lemon pesto dressing. Prepare the squash and cucumbers by slicing them thinly. Combine all the salad ingredients in a large bowl and mix well. Pour over the dressing and toss well to combine. Sprinkle crumbled bacon over the top to serve.

Steps to make Crunchy Lemon-Pesto Garden Salad

Prepare dressing

In a small bowl, combine 5 tablespoons of pesto with 1 tablespoon of lemon juice, 2 teaspoons of grated lemon zest, 1 ½ teaspoons of Dijon mustard, ¼ teaspoon of garlic salt and ¼ teaspoon of pepper.

Assemble salad

In a large serving bowl, combine 2 ½ cups of thinly sliced yellow summer squash, 1 ¾ cups of thinly sliced mini cucumbers, ¾ cup of fresh peas, ½ a cup of shredded Parmesan cheese and ¼ cup of thinly sliced green onions.

Dress salad

Pour the dressing over the salad and toss well to coat.

Top with bacon

Sprinkle over 5 crumbled bacon strips.

Serve

Serve alongside grilled chicken or fish.
