For the pesto dressing

- 1 tbsp Lemon juice
- 2 tsp Lemon zestgrated
- 1 ½ tsp Dijon mustard
- ¼ tsp Garlic salt
- ¼ tsp Black pepper
For the salad
- 2 ½ cups Summer squashyellow, thinly sliced
- 1 ¾ cups Cucumbersmini, thinly sliced
- ¾ cup Fresh peas
- ½ cup Parmesan cheeseshredded
- ¼ cup Green onionthinly sliced
To serve
- 5 strips Baconthick-sliced, cooked and crumbled

Not my personal favorite i think I liked the zucchini jar salad a lot more but this was good too just very sour.

I tossed some bacon bits into mine and it was AMAZING! ultra flavorful, check, easy to make , check and cheap too!
My family is Hispanic so anything with lemon is like gods calling lol, huge crowd pleaser on my end since everyone devoured it.
