For this recipe, we’ll be using two large English cucumbers. You don’t need to peel them. Just cut them into reasonable chunks to fit your blender. Don’t peel the ginger either. Simply slice it into thin pieces and add them to the blender, too. Add the mint leaves, reserving some for garnish, fresh lime juice, sugar, and half of the water, and blend until very smooth. Strain the mixture through a fine sieve and add the remaining water. Chill or serve right away over ice, garnished with mint sprigs.
To make the Cucumber Ginger Mint Agua Fresca, you will need the following ingredients:
Use a juicer to squeeze the juice out of the limes.
In a blender, place the chopped cucumbers, 1 cup freshly squeezed lime juice, ⅔ cup sugar, sliced fresh ginger, 10-15 fresh mint leaves, and 2 cups water.
Blend until very smooth.
Strain the mixture through a fine-mesh strainer to a pitcher. Add the remaining 2 cups water and stir. Chill until ready to serve.
