This Easy Roasted Whole Trout is a showstopper which you should make next time you’re feeding a crowd. It is super easy to make too so you can prepare it in advance and cook it while your guests are settling in. Or you could prepare and cook the fish in advance and serve it cold with a selection of salads. So versatile!

To prepare this dish, start by slicing onion, tomatoes and lemon and chop the herbs. Scatter ⅓ of the herbs over a baking sheet and lay the fish on top. Stuff the cavity with another ⅓ of herb mixture and top with the remaining ⅓. Dot the top with butter and season with black pepper. Roast in the oven and concentrate on what you are serving it with.

Steps to make Easy Roasted Whole Trout

Heat the oven

Preheat the oven to 355 °F.

Slice onion, tomatoes and lemons

Finely slice 1 onion, 4 ripe tomatoes and a whole lemon.

Chop herbs

Roughly chop the entire bunches of dill and parsley.

Prepare a baking dish

Drizzle some olive oil over a large baking dish or sheet. Scatter ⅓ of the sliced tomato, lemon and herbs over the oil.

Lay fish on top

Place the trout on the baking dish. Season the skin and cavity with sea salt and black pepper.

Stuff and top the fish

Place another ⅓ of the sliced tomato, lemon and herbs into the fish cavity. Top with the remaining ⅓ over the top. Arrange a few slices of tomato around the trout.

Top with butter

Dot the top of the fish with 50 grams of butter and drizzle with 2 tablespoons of olive oil and a twist of black pepper.

Roast

Roast the trout in the preheated oven for 25 minutes, until just cooked through.

Serve

Serve whole on a large serving plate.
