To make Eggs Baked in Avocado, you will need the following ingredients:
Cut avocado in half and scoop out some of the flesh from the center to make space for the eggs to sit. You can serve it on the side with the cooked eggs.
Separate the egg whites from the egg yolks and place in 2 separate bowls.
Add salt to the bowl of egg whites and mix together, well.
In a large pan, heat the olive oil and add avocados to sear for about 15-20 seconds, until golden.
Turn over the avocado shells and divide raw egg whites into each shell. Do not worry if the eggs overflow. Cover the pan with a lid, turn down the heat and cook for 5-10 minutes until the egg whites, inside the avocado, are set.
Slide the egg yolks into the avocados and over the set egg whites. Place the lid back on the pan and cook for another 2-3 minutes. If a thin white cover forms over the egg whites, wait about 1 minute for it to disappear and the yolks should be shiny and yellow.
