This Vegan Garlic Scape and Swiss Chard Pesto recipe adds another twist to one of my favorite pesto recipes. I love pesto and I always have a jar of on standby in my fridge. I never buy pesto in a store since I realised how quick and easy it is to make at home. Classic pesto always has cheese, but since I like to make vegan pestos, it is much better for me to experiment at home.
Garlic scapes are the spiral green stalks that grow from the bulbs of garlic plants. There are always scapes at my local farmer’s market at this time of year. In this recipe I blend them them with swiss chard, walnuts and lemon to make this healthy and delicious pesto. I sometimes add a sprinkle of crushed red pepper flakes to add a little kick.
To make my version of Vegan Garlic Scape and Swiss Chard Pesto, you will need the following ingredients:
Lightly cook the swiss chard leaves in boiling water for about 30 seconds. Rinse under cold water to stop the cooking process and squeeze out the excess water.
Place the swiss chard, garlic scapes, walnuts, crushed red pepper and lemon juice into the bowl of your food processor. Pulse until all the ingredients have come together but the mixture is still slightly chunky.
With the food processor running, pour in all the olive oil slowly.
Process the ingredients until you have a smooth paste.
Serve with pasta or on freshly toasted ciabatta bread for a delicious vegan snack.
