Steps to make Gluten Free Banana Oat Bread

Heat oven and prepare loaf pan

Preheat the oven to 350 °F and line and grease a 2-pound loaf pan (8.5 inches x 4.5 inches).

Combine dry ingredients

Whisk together 120 grams rolled oats, 120 grams almond flour, 30 grams pumpkin seeds, 25 grams ground flaxseeds, 20 grams hemp seeds, 2 teaspoons baking soda, 1 teaspoon ground cinnamon, and ½ teaspoon salt in a large mixing bowl and set aside.

Combine wet ingredients

In another large mixing bowl, whisk together 60 grams Greek yogurt, 3 eggs, 7 tablespoons honey or maple syrup, and 2 mashed bananas.

Mix wet and dry ingredients

Pour the wet ingredients into the dry ingredients and mix together until fully combined. Remember not to overmix.

Transfer the batter to the prepared loaf pan and arrange the extra banana on top. Bake in the oven for 1 hour.

Once baked, remove the banana bread from the oven and cool in the pan for 30 minutes before transferring to a wire rack to cool completely.
