I like to add some authentic carrots, celery and chopped onions to my bowl because what is a chicken noodle soup without its softened veggies?
To make Gluten Free Homemade Chicken Noodle Soup, you will need the following ingredients:
In a large soup pot over medium heat, heat 1 tablespoon butter and 1 tablespoon olive oil and add the carrots, celery and shallot. Season the mix with salt and pepper and sauté for 10 minutes until softened.
Add garlic and sauté for another minute until fragrant.
Add chicken broth and bring the pot to a boil.
Season chicken with salt and pepper and add to the boiling soup pot.
Along with the chicken, add the noodles and bring the heat down to medium to simmer for about 8-10 minutes, stirring occasionally, until the pasta is cooked.
Season with salt and pepper to taste before serving! If reheating, add more chicken broth to the pot as the noodles will soak up most of the liquid.
