This mix has so many tantalizing flavors and tastes by bringing together fresh herbs and spices of turmeric, ground cinnamon, vegetable stock, coriander and mint in an extra fluffy couscous with chopped, dried apricots and homemade crispy, pink onions.
To make Golden Couscous with Apricots and Crispy Onions, you will need the following ingredients: Onions?
In a large bowl, add the couscous to 500ml boiling water and stir in the stock cube, turmeric, cinnamon and apricots, and season well. Mix to combine, then cover with plastic wrap and leave for 5 mins, to cook.
In a dish, season half the onions with a pinch of salt and the sugar and pour over enough boiling water to cover, fully. Leave to steep for 10 minutes, removing some of the acidity and turning them into a bright pink color.
In a deep saucepan, heat oil, filling about 5cm up the side.
Once the oil is hot, fry the remaining onions in batches, for 1-2 minutes until golden and crispy. Drain on kitchen paper towel and season with a sprinkle of salt.
Using a fork, fluff up the couscous mix then drain the steeped onions and add some to the bowl (save a few for garnishing). Stir through with the lemon zest, lemon juice, olive oil and fresh herbs.
Portion onto a serving plate and garnish with crispy onions and mint leaves.
