Roasted Grape, Goat Cheese Stuffed Sweet Potatoes is one of those recipes when you hear the ingredients you think, “no, that combination won’t work” but once you try it, you will change your mind so fast! Mixing goat cheese and sweet potatoes with roasted grapes is genius and I can’t wait for you to try it!

Start by baking the sweet potatoes until they are tender. Roast grapes on a nonstick baking sheet with a drizzle of oil and a pinch of salt and pepper until they begin to burst. Once the sweet potatoes and grapes are cool, gently remove the potato flesh with a spoon and mash it with goat cheese, cinnamon, nutmeg, salt, pepper and honey. Scoop it back into the potato skins and return them to the oven, and top with the remaining goat cheese. Served topped with roasted grapes and a drizzle of honey. Enjoy!

Steps to make Roasted Grape, Goat Cheese Stuffed Sweet Potatoes

Preheat oven

Heat your oven to 350 °F.

Bake potatoes

Make holes in each potato by stabbing it with a fork. Wrap tightly in aluminum foil and bake in the oven for 45-60 minutes or until the flesh is soft. Remove from the oven and unwrap foil. Slice a slit down the middle of each sweet potato and leave to rest until cool enough to touch.

Roast grapes

Increase the oven temperature to 450 °F. Place 2 cups of grapes on a baking sheet. Drizzle with grapeseed oil and sprinkle with a pinch each of salt and pepper. Toss to coat and roast the grapes in the oven for 20-25 minutes until they start to burst. Remove from the oven and leave to cool.

Scoop out potato flesh

Once the sweet potatoes are cool enough to touch, use a spoon to scoop out the flesh out of each sweet potato and place it in a large bowl. Make sure the skins stay intact.

Make filling

Add 3 ounces of goat cheese to the potato flesh with cinnamon, nutmeg, salt, pepper and 2 tablespoons of honey. Mash all the ingredients together.

Add filling to skins

Refill the potato skins with the filling. You can return the sweet potatoes to the oven to heat them if you wish.

Top with grapes and goat cheese

Top each potato with the remaining goat cheese and the roasted grapes.

Serve

Serve drizzled with the remaining honey.
