I use a regular, store-bought vanilla ice cream for the creamy part because it’s just easier and saves so much more time than preparing your own but this recipe does describe steps to making the grapefruit sorbet made from sugar-water syrup combined with hibiscus tea, grapefruit zest and grapefruit juice.
To make Grapefruit Creamsicle, you will need the following ingredients:
Scoop 1/2 quart vanilla ice cream into an 8 x 4 x 2½ -inch loaf pan and pack tightly along one side to fill one half.
Cover with plastic wrap and freeze for at least 1 hour until firm.
In a small saucepan, boil 1¼ cups sugar in 1¼ cups water and stir until sugar is dissolved.
Remove the saucepan from the heat and add 2 hibiscus tea bags or 2 teaspoons of dried hibiscus flowers and 1 tablespoon of grapefruit zest. Set aside for 10 minutes to steep then remove tea bags and discard.
Add 1½ cups grapefruit juice and stir to mix well.
Cover with plastic wrap and refrigerate for 1 hour to chill until cold.
Transfer to an ice cream maker and churn according to the manufacturer’s instructions. Transfer sorbet to the other half of the loaf pan.
Cover with plastic wrap and freeze again for about 2 hours until firm.
To serve, scoop across the middle of the vanilla ice cream and grapefruit sorbet to form swirled scoops.
